Cast iron sear — the steakhouse method
Get your cast iron screaming hot. Pat your steak completely dry, season generously with salt, and press flat into the pan. Don't move it for 90 seconds. Flip once, add butter, garlic and thyme and baste continuously. Rest for half the cooking time — this is non-negotiable for grass fed beef.

BBQ — high heat, bone cuts
T-bones, rump and sirloin are built for the grill. Preheat to high, oil the grate, and cook over direct heat 3–4 minutes each side for medium-rare. Let the cut rest on a wire rack — never cover with foil or you'll steam the crust you just worked so hard to build.

Slow roast — rib roast & chuck
A standing rib roast at 220°C for 20 minutes then 160°C for 15 minutes per 500g produces a deep crust and a perfectly pink centre. Chuck and blade roasts need patience — 150°C for 4+ hours in liquid with aromatics until pull-apart tender. Don't rush these cuts.

Braise — brisket, cheeks & chuck
Brisket, beef cheeks and diced chuck are built to braise. Brown hard in batches — colour equals flavour — then build a base of onion, carrot, celery, red wine and beef stock. Cover and cook at 150°C for 3–4 hours. The collagen transforms into gelatin and produces a sauce you can't replicate any other way.

to know about grass fed beef.

Grass-fed and grass-finished beef comes from cattle that graze on pasture their entire lives and are never moved to a feedlot for grain finishing before slaughter. Grain-fed cattle are moved to feedlots in the final weeks or months and fed a grain-based diet to rapidly increase fat marbling. Grass-fed beef has a leaner, cleaner flavour profile, higher Omega-3 and CLA content, and is generally considered more ethical and environmentally sound. Ours is 100% grass-fed and grass-finished — meaning no grain at any stage.
For beginners, the scotch fillet is the most forgiving — the fat marbling keeps it moist even if you slightly overcook it. Rib eye gives the richest flavour. Eye fillet is the most tender but requires precise cooking to shine. Sirloin and rump are firmer textured with bold flavour — excellent on a hot BBQ. For cast iron at home, rib eye or scotch fillet are the best starting points.
Grass-fed beef is leaner than grain-fed, which means it benefits from slightly lower cooking temperatures and is less forgiving if overcooked. Cook to medium-rare (internal temp 54–57°C) rather than medium. Always rest the steak for at least half its cooking time before cutting — this is especially important with grass-fed beef. High heat for a short time beats medium heat for a long time every single time.
